Large flour tortilla filled with Jack and cheddar cheese, choice of chicken, ground beef or chorizo. Topped with sour cream, guacamole, tomatoes and onions.

Prepare the Fillings
Choose your desired protein (chicken, ground beef, or chorizo) and cook it thoroughly if not already cooked. Shred the chicken or crumble the chorizo as needed. Set aside.

Grate the Cheeses
Grate the Jack cheese and cheddar cheese if not pre-grated, and mix them in a bowl.
Cooking the Quesadilla

Assemble the Quesadilla
Place a large flour tortilla on a flat surface. Sprinkle half of the cheese mixture evenly over one half of the tortilla. Add the cooked protein of your choice on top of the cheese, then sprinkle the remaining cheese over the protein.

Fold the Quesadilla
Fold the tortilla in half to cover the fillings, creating a half-moon shape.

Cook the Quesadilla
Heat a non-stick skillet over medium heat. Add the folded quesadilla to the skillet. Cook for about 3-4 minutes on each side or until the tortilla is golden brown and the cheese has melted.

Slice and Serve
Remove the quesadilla from the skillet and let it cool for a minute. Slice it into wedges and serve with sour cream, guacamole, diced tomatoes, and diced onions on the side.
