Method
Preparation
- 1
Prepare the Rice
In a medium saucepan, cook the rice according to package instructions. Once cooked, remove from heat and set aside.
- 2
Heat the Beans
In a small saucepan, heat the canned black beans over medium heat. Stir occasionally until warmed through, about 5-7 minutes. Add salt, black pepper, cumin, and garlic powder to taste.
- 3
Prepare the Chicken
If not already done, shred or chop the cooked chicken breast into bite-sized pieces. Season with additional salt, pepper, or spices if desired.
Assembly
- 4
Assemble the Burritos
Lay a flour tortilla flat on a clean surface. In the center, layer 1/2 cup of cooked rice, followed by 1/4 cup of heated black beans, and 1/2 cup of shredded chicken.
- 5
Add Cheese
Sprinkle 1/4 cup of shredded cheese on top of the filling.
- 6
Wrap the Burrito
Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top, making sure the filling is secure inside.
Cooking
- 7
Melt the Cheese
In a skillet over medium heat, place the wrapped burrito seam-side down. Cook for about 2-3 minutes until the bottom is golden brown, then flip and repeat on the other side. This will help melt the cheese inside.
