Prepare the Meat
If using grilled chicken, al pastor, or carne asada, grill or cook the meat of your choice ahead of time until fully cooked. Shred or chop into bite-sized pieces.

Heat the refried beans in a saucepan over medium heat until warm. Stir occasionally to prevent sticking.
Assembly

Layer the Chips and Beans
On a large baking sheet or oven-safe dish, spread the tortilla chips evenly. Spoon the warmed refried beans over the chips, ensuring even coverage.

Add the Meat
Distribute your choice of grilled chicken, al pastor, or carne asada evenly over the beans and chips.

Top with Cheese
Sprinkle the shredded cheddar cheese generously over the meat and beans.
Baking

Melt the Cheese
Preheat your oven to 350°F (175°C). Place the assembled nachos in the oven and bake for about 10 minutes, or until the cheese is melted and bubbly.

Remove the nachos from the oven. Top with dollops of guacamole and sour cream. Sprinkle the diced onions and tomatoes over the top before serving.
