Prepare the Filling

In a mixing bowl, combine the shredded chicken, diced onion, chopped cilantro, and salt. Mix well and set aside.

Make the Green Sauce

In a saucepan, boil the tomatillos in water for about 10 minutes until soft. Drain and let cool slightly. In a blender, combine the boiled tomatillos, chopped jalapeño, minced garlic, lime juice, and salt. Blend until smooth. Adjust seasoning if necessary.

Assemble the Enchiladas

Preheat your oven to 375°F (190°C). In a large skillet, heat each corn tortilla for about 30 seconds on each side to make them pliable. Take a tortilla, add 2-3 tablespoons of the chicken filling in the center, roll it up tightly, and place it seam-side down in a baking dish. Repeat with remaining tortillas and filling.

Add the Sauce and Cheese

Once all the enchiladas are assembled, pour the green sauce evenly over the top. Sprinkle crumbled cheese over the sauce.

Bake

Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.

Serve

Remove from the oven and let cool for a few minutes. Serve hot, garnished with sour cream and additional cilantro if desired.
