Preparation

Sauté the Filling

In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

Add Chicken and Seasonings

Stir in the shredded chicken, cumin, salt, and pepper. Cook for an additional 5 minutes until heated through. Remove from heat and stir in 1 cup of shredded cheddar cheese. Set aside.

Prepare the Tortillas

Preheat your oven to 350°F (175°C). If the tortillas are stiff, warm them in the microwave for about 30 seconds to make them pliable.

Fill the Tortillas

Take a tortilla and place a couple of tablespoons of the chicken filling in the center. Roll the tortilla tightly and place it seam-side down in a baking dish.

Repeat

Continue filling and rolling the remaining tortillas until all the filling is used.

Baking

Add Sauce and Cheese

Pour the red enchilada sauce evenly over the rolled enchiladas in the baking dish. Sprinkle the remaining cheddar cheese on top.

Bake

Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
