Churro Dough Preparation
Boil Water Mixture
In a medium saucepan, combine 1 cup of water, 2 tablespoons of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.
Add Flour
Once the mixture is boiling, remove it from heat and stir in 1 cup of all-purpose flour until the mixture forms a ball. Let it cool for a few minutes.
Incorporate Eggs and Vanilla
Add 2 large eggs and 1 teaspoon of vanilla extract to the cooled dough. Mix well until the dough is smooth and well combined.

Mix Sugar and Cinnamon
In a shallow bowl, combine 1 cup of granulated sugar and 2 teaspoons of ground cinnamon. Set aside.
Frying
Pipe Churros
Transfer the dough to a piping bag fitted with a star tip. Pipe strips of dough, about 4-6 inches long, directly into the hot oil.
Fry Until Golden
Fry the churros for about 2-3 minutes on each side, or until they are golden brown and crispy. Remove them from the oil and drain on paper towels.
