Method

Prepare the Chicken Filling

  1. 1

    Cook the Chicken

In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and season with cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 15-20 minutes or until the chicken is cooked through.

  2. 2

    Shred the Chicken

Remove the chicken from the saucepan and let it cool slightly. Once cool, shred the chicken using two forks and return it to the pan. Stir the chicken in the remaining broth and spices until well combined. Set aside.

Assemble the Taquitos

  1. 3

    Fill the Tortillas

Take a flour tortilla and place about 2-3 tablespoons of the chicken filling in the center. Roll the tortilla tightly around the filling, folding in the sides to secure the filling inside. Repeat with the remaining tortillas.

Fry the Taquitos

  1. 4

    Heat the Oil

In a large skillet, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).

  2. 5

    Fry the Taquitos

Carefully add 2-3 taquitos to the hot oil, seam side down, and fry for about 2-3 minutes on each side, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve the Taquitos

  1. 6

    Garnish and Serve

Arrange the fried taquitos on a serving platter. Top with shredded lettuce, pico de gallo, sour cream, guacamole, and queso fresco. Serve with mild salsa on the side for dipping.
