Preparation of Seafood

1. Cook Octopus

In a pot of boiling salted water, add the octopus and cook for about 45 minutes until tender. Remove from water and let cool. Cut into bite-sized pieces.

2. Cook Shrimp

In a separate pot, boil water and add the shrimp. Cook for about 3-5 minutes until they turn pink and opaque. Drain and let cool. Peel and devein the shrimp, then chop into smaller pieces.

Dice the avocado, onion, tomatoes, and cucumber into small pieces. Roughly chop the cilantro, discarding the thick stems.

Making the Broth

4. Combine Ingredients

In a large bowl, combine the seafood stock, lime juice, olive oil, salt, and black pepper. Stir well to combine.

Assembly

5. Mix Seafood and Vegetables

Add the cooked octopus and shrimp to the broth mixture. Then, add the diced avocado, onion, tomatoes, cucumber, and cilantro. Gently mix to combine all the ingredients.

6. Serve

Serve the Campechana warm or chilled, garnished with additional lime wedges if desired.
