Preparation

    Prepare the Chicken

    Rinse the whole chicken under cold water and remove any giblets from the cavity. Pat it dry with paper towels.

    Chop Vegetables

    Peel and chop the carrots, celery, and potatoes into bite-sized pieces. Roughly chop the onion and mince the garlic.

    Prepare the Herbs

    Rinse the cilantro and set aside. Prepare bay leaves by ensuring they are clean.

Cooking

    Combine Ingredients

    In a large pot, add the rinsed chicken, chopped vegetables (carrots, celery, potatoes), onion, and garlic. Pour in the water.

    Add Herbs and Spices

    Add the cilantro, bay leaves, salt, and black pepper to the pot.

    Bring to a Boil

    Place the pot over medium-high heat and bring the mixture to a boil.

    Simmer the Broth

    Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 45 minutes or until the chicken is cooked through and tender.

    Remove Chicken

    Carefully remove the chicken from the pot and let it cool slightly. Shred the meat from the bones and discard the skin and bones.

    Strain the Broth

    Strain the broth through a fine mesh sieve to remove the vegetables and herbs, returning the clear broth to the pot.

    Add Shredded Chicken

    Add the shredded chicken back into the pot with the broth. Adjust seasoning if necessary.

    Ladle hot caldo de pollo into bowls and garnish with additional cilantro if desired.
