Burrito Loco Recipe

You’ll be crazy about this burrito! Flour tortilla filled with rice, whole beans, choice of grilled chicken or carne asada then topped with green chile, Monterey Jack cheese, lettuce, tomatoes, onions, sour cream and guacamole.

Preparation of Ingredients

    Cook the Rice

    In a pot, bring 2 cups of water to a boil. Add 1 cup of rice, reduce heat to low, cover, and let it simmer for about 18-20 minutes until cooked. Fluff with a fork and set aside.

    Prepare the Beans

    If using canned beans, rinse them under cold water and warm them in a small pot over medium heat until heated through. If using cooked beans, simply warm them.

    Grill Chicken or Carne Asada

    Season your choice of chicken or carne asada with salt, pepper, and any desired spices. Grill on medium-high heat until cooked through, about 5-7 minutes per side for chicken or 4-6 minutes per side for carne asada. Let rest, then slice.

    Prepare Toppings

    Shred the lettuce, dice the tomatoes and onion, and set aside all toppings (green chile sauce, cheese, sour cream, guacamole) for assembly.

Assembly

    Assemble the Burrito

    Lay the flour tortilla flat on a clean surface. In the center, add 1 cup of cooked rice, 1 cup of whole beans, and 1 cup of grilled chicken or carne asada.

    Add Toppings

    Top the filling with 1 cup of green chile sauce, 1 cup of shredded Monterey Jack cheese, 1 cup of shredded lettuce, 1 cup of diced tomatoes, and 0.5 cup of diced onions.

    Finish with Sauces

    Drizzle 0.5 cup of sour cream and 0.5 cup of guacamole over the top.

    Wrap the Burrito

    Fold in the sides of the tortilla and then roll from the bottom up to enclose the filling. Ensure it is tightly wrapped.
