Colorado classic. Beef braised in a mild red sauce, rice, and beans wrapped in a flour tortilla smothered in green chili, Monterey Jack cheese, sour cream and guacamole. Muy Delicioso!

Make the Sauce
Return the beef to the pot. Add the beef broth, diced tomatoes, chili powder, cumin, smoked paprika, and adjust salt and pepper to taste. Bring to a simmer, cover, and cook on low heat for about 2 hours, or until the beef is tender.

Rice and Beans Preparation

Cook the Rice
In a medium saucepan, combine the long-grain rice and water. Bring to a boil, then reduce to a simmer, cover, and cook for about 15-20 minutes or until the rice is tender and the water is absorbed. Fluff with a fork.

Add the Beans
Stir in the drained black beans into the cooked rice and cook for an additional 2-3 minutes until heated through. Season with salt if needed.
Burrito Assembly

Assemble the Burritos
Warm the flour tortillas in a pan or microwave until pliable. Lay out each tortilla and add a scoop of the shredded beef, a scoop of the rice and beans mixture, and a drizzle of green chili sauce.

Add Toppings
Top each burrito with shredded Monterey Jack cheese, a dollop of sour cream, and a generous spoonful of guacamole.

Wrap the Burritos
Fold the sides of the tortilla inward and then roll from the bottom up to enclose the filling. Place seam side down on a plate.

Serve the burritos warm, drizzled with extra green chili sauce if desired.
