Make the Tortilla Dough
In a mixing bowl, combine the flour and salt. Mix well.

Add the water and olive oil to the dry ingredients. Knead the mixture until the dough is smooth and elastic, about 5-7 minutes.

Cover the dough with a damp cloth and let it rest for at least 30 minutes.

After resting, divide the dough into 8 equal pieces and roll each piece into a ball.

Using a rolling pin, flatten each ball into a thin tortilla, about 6-8 inches in diameter.

Add the sliced onion and bell pepper and sauté until they are soft, about 5 minutes.

Stir in the shredded chicken and cook for another 2-3 minutes until everything is heated through.
Guacamole

Mix in the diced tomato and chopped cilantro until well combined.
Assemble and Cook

Assemble the Quesadilla
Place a tortilla in a clean skillet over medium heat.

Spread an even layer of the chicken and vegetable filling on half of the tortilla.

Top with shredded cheese and fold the tortilla over to create a half-moon shape.

Cook for about 3-4 minutes on one side until the tortilla is golden brown, then flip and cook the other side for another 3-4 minutes or until the cheese is melted.

Remove from skillet and let cool slightly before cutting into wedges.

Serve the quesadilla hot with a side of guacamole and sour cream mixed with hot sauce.
