Carnitas
Method
Preparation
- 1
Prepare the Pork
Cut the pork shoulder into large chunks and season it with salt and black pepper.
- 2
Mix the Marinade
In a large bowl, combine the orange juice, lime juice, minced garlic, cumin, oregano, and remaining salt. Mix well.
- 3
Cook the Pork
Place the seasoned pork chunks into a large slow cooker. Pour the marinade over the pork, and add bay leaves. Cover and cook on low for 8 to 10 hours until the pork is tender and easily shreds.
- 4
Shred the Pork
Once cooked, remove the pork from the slow cooker and let it cool slightly. Shred the meat using two forks.
- 5
Crisp the Carnitas
In a large skillet, heat lard or vegetable oil over medium-high heat. Add the shredded pork in an even layer and cook until crispy, about 5-7 minutes.
- 6
Prepare the Tacos
Warm the corn tortillas in a dry skillet or directly over a gas flame until pliable. Fill each tortilla with the crispy carnitas.
- 7
Garnish and Serve
Top the tacos with chopped onions, cilantro, and serve with lime wedges on the side.
