Cook the Pastor Pork
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the pastor pork, season with salt and pepper, and cook until browned and fully cooked through, about 7-10 minutes. Remove from heat.

Assemble the Quesadilla
On one half of each flour tortilla, layer the cooked pastor pork, diced pineapple, chopped onion, cilantro, and shredded cheese. Fold the tortilla over to cover the filling.

Cook the Quesadilla
In the same skillet, add another tablespoon of olive oil over medium heat. Place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side, or until the cheese is melted and the tortilla is golden brown. Repeat with remaining quesadillas.

Cut each quesadilla into wedges and serve hot with your favorite salsa or guacamole.
