Prepare the Tortilla Strips
Cut each corn tortilla into strips approximately 1 inch wide.

Fry the Tortilla Strips
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the tortilla strips in batches and fry until they are golden and crispy, about 2-3 minutes per batch. Remove and drain on paper towels, then sprinkle with salt.

Assemble the Chilaquiles
In a large bowl or plate, place a generous layer of the fried tortilla strips. Top with the shredded chicken, then pour over the red salsa ensuring the tortillas are well coated.

Add Toppings
Sprinkle the crumbled Cotija cheese and chopped onion over the top. Drizzle with Mexican crema and finish with a sprinkle of fresh cilantro.

Serve immediately while the tortillas are still crispy, and enjoy your homemade chilaquiles!
