    Prepare the Filling

    In a large bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix well and set aside to let the flavors meld.

    Make the Pie Crust

    In a separate bowl, combine 2 1/2 cups of all-purpose flour, 1 tsp of salt, and 1 tsp of sugar. Cut in 1 cup of cold unsalted butter until the mixture resembles coarse crumbs. Gradually add ice water, 1 tbsp at a time, until the dough comes together. Divide into two balls, flatten, wrap in plastic, and refrigerate for at least 1 hour.

    Assemble the Pie

    Preheat your oven to 425°F (220°C). Roll out one dough ball on a floured surface to fit your pie dish. Place it in the dish and fill with the apple mixture. Roll out the second dough ball and place over the filling. Seal the edges and cut slits in the top crust to allow steam to escape.

    Bake the Pie

    Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for 35-40 minutes, or until the apples are soft and the crust is golden brown. Let cool before serving.
