Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Potatoes
Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch.

Dry the Potatoes
After soaking, drain the water and pat the potatoes dry using a clean kitchen towel.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add a batch of the dried potato strips to the hot oil. Fry them for about 5-7 minutes or until they are golden brown and crispy. Do not overcrowd the pot.

Drain and Season
Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt.

Serve the crispy French fries with ketchup on the side.
