A jalapeno cheddar tortilla, stuffed with grilled chicken, tomatoes, black beans, corn, mozzarella & cheddar cheese. Served with a side of sour cream & southwest dressing.

Cook the Grilled Chicken
Preheat your grill or skillet over medium-high heat. Season the chicken breasts with salt and pepper. Grill for about 6-7 minutes on each side or until fully cooked. Remove from heat and let it rest before slicing it into bite-sized pieces.

Prepare the Filling
In a mixing bowl, combine the diced tomatoes, black beans, corn, mozzarella cheese, and cheddar cheese. Add the sliced grilled chicken and mix until well combined.

Assemble the Quesadilla
Lay one jalapeno cheddar tortilla flat on a clean surface. Spoon a generous amount of the filling mixture onto one half of the tortilla, folding the other half over to cover the filling.

Cook the Quesadilla
Heat a non-stick skillet over medium heat. Add a little oil if desired. Place the quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with remaining tortillas and filling.

Cut each quesadilla into wedges and serve hot with a side of sour cream and southwest dressing for dipping.
