Wrap Preparation
Prepare the Chicken
Grill the chicken breasts over medium heat until fully cooked, about 6-7 minutes per side. Allow to rest for 5 minutes, then slice into strips.
Prepare the Vegetables
Wash and chop the lettuce, dice the tomato, and if using frozen corn, cook according to package instructions. If using canned corn, rinse and drain.
Assemble the Wrap
Take a jalapeno cheddar wrap and layer it with sliced grilled chicken, lettuce, diced tomato, corn, black beans, and shredded cheddar cheese.
Dressing Preparation
Make the Dressing
In a bowl, combine Greek yogurt, mayonnaise, lime juice, chili powder, cumin, garlic powder, salt, and black pepper. Mix until smooth and well combined.
Add Dressing to Wrap
Drizzle the southwest dressing over the assembled wrap ingredients before rolling it up.
Final Assembly
Roll the Wrap
Carefully roll the wrap tightly, folding in the sides as you go to secure the filling. Cut in half if desired.
