Preparing the Chicken

Grill the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F). Remove from grill and let it rest for 5 minutes before slicing.
Making the Salad

Combine Salad Ingredients
In a large salad bowl, combine mixed greens, black beans, corn, diced tomatoes, and both types of cheese. Toss gently to mix all the ingredients evenly.

Add Chicken
Slice the grilled chicken into strips and add it to the salad mixture. Gently toss again to distribute the chicken throughout the salad.

Top with Tortilla Strips
Sprinkle the tortilla strips over the top of the salad for added crunch.
Making the Dressing

Prepare Southwest Dressing
In a small bowl, whisk together olive oil, lime juice, honey, cumin, chili powder, garlic powder, salt, and black pepper until well combined. Adjust seasoning to taste.
