Potato Skins

    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash the Russet potatoes thoroughly and pierce them several times with a fork to allow steam to escape during baking.

    Bake the Potatoes

    Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until fork-tender. Remove from the oven and let cool slightly.

    Scoop Out the Flesh

    Once the potatoes are cool enough to handle, slice them in half lengthwise. Carefully scoop out most of the potato flesh, leaving about 1/4 inch of potato on the skin. Save the scooped-out potato for another use.

    Season and Bake Again

    Brush the insides of the potato skins with olive oil and sprinkle with salt and black pepper. Place the skins cut side down on a baking sheet and bake for an additional 10-15 minutes, or until crispy.

    Add Toppings

    Flip the potato skins over and fill each skin with cheddar cheese, mozzarella cheese, and chopped bacon. Return to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.

    Garnish

    Remove the potato skins from the oven and sprinkle with chopped chives.

    Prepare Dipping Sauces

    In small bowls, serve the sour cream and ranch dressing on the side for dipping.
