    Prepare the Onions

    Peel the large onions and slice them into thick rings, about 1/2 inch thick. Separate the rings and set them aside.

    Make the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Mix well.

    Add the Wet Ingredients

    In a separate bowl, whisk together the eggs and cold sparkling water until frothy. Pour the egg mixture into the dry ingredients and stir until just combined. The batter should be thick but pourable.

    Heat the Oil

    In a deep frying pan or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Onion Rings

    Dip each onion ring into the batter, allowing excess batter to drip off. Carefully place the battered rings into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and crispy.

    Drain and Serve

    Once cooked, remove the onion rings from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with ranch dressing on the side.

    Mix the Dressing

    In a medium bowl, combine the mayonnaise, sour cream, buttermilk, dried dill, garlic powder, onion powder, salt, and black pepper. Whisk until smooth and well combined.

    Chill

    Cover the ranch dressing and refrigerate for at least 30 minutes to allow the flavors to meld.
