Preparing the Mushrooms

Remove Stems
Carefully twist and remove the stems from the mushrooms, or cut them off with a knife if they are difficult to remove.
Making the Batter

Combine Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder until well combined.

Add Water
Gradually add the cold water to the dry ingredients while whisking to create a smooth batter. The batter should be thick enough to coat the mushrooms.
Frying the Mushrooms

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Mushrooms
Dip each mushroom into the batter, ensuring it is completely coated.

Fry the Mushrooms
Carefully place the battered mushrooms into the hot oil in small batches, frying them for about 3-4 minutes or until golden brown and crispy.

In a medium bowl, mix together the mayonnaise, sour cream, dried dill, garlic powder, and onion powder until smooth.
