Burger Preparation

Prepare the Burger Patties
In a mixing bowl, combine ground beef with salt and black pepper. Mix until just combined. Divide the mixture into four equal portions and shape them into patties.

Toast the Burger Buns
While the patties are cooking, lightly toast the burger buns on the grill or in a toaster until golden brown.
Fried Jalapenos Preparation

Prepare the Jalapenos
Slice the jalapenos into thin rings. Remove seeds if less heat is desired.

Make the Batter
In a bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt. Gradually add water until a smooth batter forms.

Fry the Jalapenos
Heat oil in a deep frying pan over medium-high heat. Dip jalapeno rings in the batter, then carefully place them in the hot oil. Fry until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.
Sauce Preparation

Make the Honey Habanero Sauce
In a small saucepan, combine honey, finely chopped habanero peppers, soy sauce, and lime juice. Heat over low heat, stirring until well combined. Simmer for 5 minutes, then remove from heat.
Assembly

Assemble the Firecracker Burger
On the bottom half of each toasted bun, place a cooked burger patty topped with melted pepper jack cheese. Add a generous amount of fried jalapenos on top of the cheese, and drizzle with honey habanero sauce. Finish with the top half of the bun.

Serve the Firecracker Burgers immediately with your choice of side.
