    Prepare the Cheese Mixture

    In a medium saucepan, combine Velveeta cheese, cream cheese, and milk over medium heat. Stir continuously until melted and smooth.

    Add Flavorings

    Mix in the diced tomatoes with green chilies, chili powder, cumin, and salt. Continue to heat for another 5 minutes, stirring occasionally.

    Incorporate Cheddar

    Remove from heat and stir in the shredded cheddar cheese until melted. Keep warm until serving.

Salsa

    Chop Vegetables

    Dice the tomatoes, red onion, and jalapeño (removing seeds for less heat if desired). Finely chop the fresh cilantro.

    Mix Ingredients

    In a mixing bowl, combine the diced tomatoes, red onion, jalapeño, cilantro, and lime juice. Season with salt to taste.

    Chill

    Let the salsa sit for at least 15 minutes to allow the flavors to meld before serving.

Guacamole

    Prepare Avocados

    Cut avocados in half, remove the pits, and scoop the flesh into a mixing bowl.

    Mash and Mix

    Mash the avocados with a fork until smooth or chunky, as preferred. Stir in lime juice, diced tomato, red onion, cilantro, and salt to taste.

    Serve

    Cover with plastic wrap directly on the surface of the guacamole to prevent browning. Serve immediately or refrigerate until ready to serve.
