Marinate the Chicken

In a large bowl, combine buttermilk, salt, black pepper, garlic powder, and cayenne pepper. Place chicken breasts in the mixture, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

Prepare the Breading

In a separate bowl, whisk together the flour, baking powder, and paprika. Remove chicken from buttermilk marinade, allowing excess to drip off, and dredge each breast in the flour mixture until fully coated. Shake off excess flour and set aside.

Frying

Fry the Chicken

In a large, deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully place the coated chicken breasts in the hot oil, cooking for about 6-8 minutes per side or until golden brown and cooked through (internal temperature should reach 165°F). Remove and drain on paper towels.

Make the Gravy

In a saucepan, melt butter over medium heat. Stir in flour and cook for about 1 minute to form a roux. Gradually whisk in chicken broth and bring to a simmer. Stir in heavy cream until well combined. Season with salt and black pepper to taste. Cook until thickened, about 3-5 minutes.
