Method
Prepare the Chicken
Season the Chicken
Rub the chicken breasts with olive oil, salt, and black pepper.
Grill the Chicken
Preheat your grill or grill pan over medium heat. Grill the chicken for about 6-7 minutes on each side until cooked through and internal temperature reaches 165°F (75°C). Remove from heat and let rest before slicing.
Cook the Pasta
Boil Water
In a large pot, bring salted water to a boil.
Cook Fettuccine
Add the fettuccine noodles to the boiling water and cook according to package instructions until al dente, usually about 3-4 minutes for fresh noodles. Drain and set aside.
Make the Alfredo Sauce
Melt Butter
In a large saucepan over medium heat, melt the unsalted butter.
Add Garlic and Cream
Once the butter has melted, add minced garlic and sauté for about 1 minute until fragrant. Then, slowly pour in the heavy cream and stir to combine.
Add Cheese and Seasoning
Gradually whisk in the grated Parmesan cheese until melted and smooth. Season with salt and black pepper to taste. Allow the sauce to simmer on low heat for about 2-3 minutes.
Combine and Serve
Combine Pasta and Sauce
Add the cooked fettuccine noodles to the Alfredo sauce, tossing to coat evenly.
Slice Chicken
Slice the grilled chicken breasts and lay them on top of the fettuccine Alfredo.
Garnish and Serve
Sprinkle with chopped fresh parsley for garnish and serve immediately.
