Preparation of Chicken Chunks

Prepare the Chicken
Cut boneless chicken thighs into bite-sized chunks and set aside.

Bread the Chicken
Coat each chicken chunk in the flour mixture, then dip in the beaten eggs, and finally coat with bread crumbs. Place the breaded chicken chunks on a baking sheet.
Cooking the Chicken

Fry the Chicken
Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the chicken chunks in batches until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.

Season the Chicken
For lemon pepper dry rub, sprinkle the seasoning over the chicken chunks and toss to coat. For blackened ranch dry rub, sprinkle and toss accordingly.

Serve the chicken chunks hot with a side of ranch or blue cheese dressing for dipping.
