Method
Preparing the Chicken

Season the Chicken
In a bowl, rub the boneless chicken breasts with olive oil and blackening seasoning until evenly coated.

Cook the Chicken
Heat a skillet over medium-high heat. Once hot, add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.
Making the Caesar Dressing

Combine Ingredients
In a mixing bowl, combine mayonnaise, Parmesan cheese, lemon juice, Worcestershire sauce, minced garlic, salt, and black pepper. Whisk together until smooth and creamy.

Adjust Seasoning
Taste the dressing and adjust salt and pepper if necessary. Set aside.
Assembling the Salad

Prepare the Romaine
Wash and chop the romaine lettuce into bite-sized pieces. Place in a large salad bowl.

Add Chicken and Dressing
Slice the rested blackened chicken and place on top of the romaine. Drizzle the creamy Caesar dressing over the salad.

Finish with Toppings
Sprinkle the croutons and additional Parmesan cheese over the salad. Toss gently to combine and serve immediately.
