Method

Prepare the Fish

1

Season the Tilapia

Rub the tilapia fillets with olive oil and then coat them evenly with the blackening spice blend.

2

Cook the Fish

Heat a skillet over medium-high heat. Once hot, add the seasoned tilapia fillets and cook for about 3-4 minutes per side until the fish is blackened and cooked through. Remove from heat and let rest.

Prepare the Tacos

3

Chop the Vegetables

Finely chop the romaine lettuce, dice the tomato, thinly slice the purple onion, and slice the avocado.

4

Warm the Tortillas

In a separate pan or on a griddle, warm the corn tortillas briefly until they are pliable, about 30 seconds on each side.

Make the Chipotle Ranch

5

Mix the Dressing

In a small bowl, combine ranch dressing with chipotle powder. Stir well to combine and set aside.

Assemble and Serve

6

Assemble the Tacos

On each warm tortilla, layer blackened tilapia, chopped romaine, diced tomato, slices of purple onion, and avocado. Drizzle with chipotle ranch.

7

Serve

Serve the tacos with a side of salsa and tortilla chips. Enjoy!
