Preparation of Chicken

    Season and Cook the Chicken

    Rub the boneless, skinless chicken breasts with olive oil and blackening seasoning. Ensure the chicken is evenly coated with the seasoning.

    Grill the Chicken

    Preheat a grill or grill pan over medium-high heat. Grill the seasoned chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove from heat and let it rest for a few minutes before slicing into thin strips.

Assembling the Quesadilla

    Prepare the Filling

    In a large bowl, combine the diced tomatoes, chopped spinach, crumbled feta cheese, and shredded mozzarella cheese. Mix well.

    Spread the Alfredo Sauce

    Take a garlic herb tortilla and spread approximately 1/4 cup of Alfredo sauce evenly over half of the tortilla.

    Add the Chicken and Filling

    Layer some of the sliced blackened chicken on top of the Alfredo sauce, followed by the cheese and vegetable mixture.

    Fold the Quesadilla

    Fold the tortilla over to cover the filling, pressing gently to seal.

Cooking the Quesadilla

    Cook the Quesadilla

    In a skillet over medium heat, add a small amount of olive oil. Place the filled quesadilla in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy. Repeat with remaining tortillas.

Serving

    Slice and Serve

    Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Slice into wedges and serve with sour cream and chipotle ranch dressing on the side.
