Method

Cooking Instructions

  1. 1

    Prepare the Rub

In a small bowl, combine smoked paprika, brown sugar, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Mix well to create a spice rub.

  2. 2

    Season the Pork

Rub the spice mixture generously all over the pork shoulder, ensuring it's well coated. Let it sit for at least 30 minutes to allow the flavors to penetrate.

  3. 3

    Preheat the Smoker

Preheat your smoker to 225°F (107°C). Use wood chips of your choice (hickory or applewood works well) for a smoky flavor.

  4. 4

    Smoke the Pork

Place the seasoned pork shoulder in the smoker. Smoke for about 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C).

  5. 5

    Prepare the Liquid for Braising

In a separate bowl, mix apple cider vinegar and water. After 3 hours of smoking, begin to baste the pork with this mixture every hour.

  6. 6

    Rest the Pork

Once the pork reaches the desired temperature, remove it from the smoker and let it rest for at least 30 minutes before pulling.

  7. 7

    Shred the Pork

Using two forks, shred the pork into bite-sized pieces. Discard any large pieces of fat.

  8. 8

    Serve

Serve the pulled pork on buns, with coleslaw, or as desired.
