Prepare the Strawberry Preserves
In a medium saucepan, combine the fresh strawberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally until the sugar dissolves and the mixture begins to bubble.
Simmer
Reduce the heat to low and let it simmer for about 20-25 minutes, stirring frequently, until the mixture thickens to a jam-like consistency.
Cool the Preserves
Remove the saucepan from the heat and let the strawberry preserves cool to room temperature.
Toast the Bread
While the preserves are cooling, toast the Italian sourdough slices until golden brown.
Spread Peanut Butter
Spread a generous layer of peanut butter on each slice of toasted sourdough.
Top with Strawberry Preserves
Spoon the cooled strawberry preserves over the peanut butter on each slice.
Add Butter (optional)
If desired, spread a thin layer of butter on top of the strawberry preserves for extra richness.
Serve
