    Prepare the Pork Loin

    Trim any excess fat from the pork loin and pat it dry with paper towels. Rub the olive oil all over the pork loin.

    Make the Rub

    In a small bowl, mix together garlic powder, onion powder, smoked paprika, salt, black pepper, and brown sugar. Rub this mixture all over the pork loin, covering it evenly.

    Marinate

    Place the seasoned pork loin in a resealable plastic bag or a dish. Pour the apple cider vinegar over the pork loin, seal the bag or cover the dish, and marinate it in the refrigerator for at least 2 hours, or preferably overnight.

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C). Once the smoker is ready, drain the wood chips and add them to the smoker according to the manufacturer's instructions.

    Smoke the Pork Loin

    Remove the pork loin from the marinade and let it come to room temperature for about 30 minutes. Place the pork loin in the smoker and smoke for approximately 2 to 3 hours, or until the internal temperature reaches 145°F (63°C).

    Once cooked, remove the pork loin from the smoker and let it rest for at least 10 minutes before slicing. Serve warm with your favorite sides.
