Method
Instructions for Preparation
- 1
Roasting the Fruits
Preheat your oven to 400°F (200°C). Toss the strawberries and blueberries with half of the granulated sugar on a baking sheet. Roast in the oven for about 15-20 minutes until they are soft and caramelized. Remove from the oven and let cool.
- 2
Making the Ice Cream Base
In a mixing bowl, combine the heavy cream, whole milk, remaining granulated sugar, vanilla extract, and a pinch of salt. Whisk until the sugar is dissolved.
- 3
Blending the Roasted Fruits
Once the roasted fruits have cooled, blend them in a blender or food processor until smooth. You can reserve a few pieces for garnish.
- 4
Combining Flavors
Fold the blended roasted fruits into the ice cream base until well combined. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
- 5
Freezing the Ice Cream
Transfer the ice cream to a container and freeze for at least 4 hours or until firm.
- 6
Preparing the Basil Cream
In a small saucepan, combine the fresh basil leaves, heavy cream, lemon juice, and a pinch of salt. Heat over medium heat until it just begins to simmer. Remove from heat and let steep for 15 minutes, then strain to remove the basil.
- 7
Serving
Scoop the ice cream into bowls and drizzle with the basil cream. Garnish with reserved roasted fruits and fresh basil leaves if desired.
