Make the Pimento Cheese
In a mixing bowl, combine sharp cheddar cheese, cream cheese, pimentos, mayonnaise, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until well combined and creamy. Adjust seasoning to taste.

Prepare the Bacon
Cook the maple-pepper bacon in a skillet over medium heat until crispy. Drain on paper towels.

Assemble the Sandwiches
Spread a generous amount of pimento cheese on one side of each slice of Texas 3-seed bread. Layer with sliced tomatoes and crispy maple-pepper bacon. Top with another slice of bread, pimento cheese side down.

Serve
Remove the sandwiches from the skillet, slice in half, and serve warm.
