Preparation

  1. 1

    Prepare the Cod

Rinse the cod fillets under cold water and pat dry with paper towels. Season both sides with salt and black pepper.

  2. 2

    Set Up Coating Station

In three separate shallow dishes, place the flour in one, whisk the eggs and milk together in another, and mix the panko breadcrumbs, Parmesan cheese, garlic powder, dried parsley, and paprika in the last.

Cooking

  1. 3

    Coat the Cod

Dredge each cod fillet in flour, shaking off the excess. Dip in the egg mixture, then coat with the panko mixture, pressing gently to adhere.

  2. 4

    Heat the Oil

In a large skillet, heat the olive oil over medium heat until hot.

  3. 5

    Cook the Cod

Add the coated cod fillets to the skillet and cook for 3-4 minutes on each side, or until golden brown and the fish flakes easily with a fork.

  4. 6

    Serve

Remove the cod from the skillet and place on a paper towel-lined plate to drain excess oil. Serve immediately with your choice of sides.
