Cooking Instructions

  1. 1

    Brining the Chicken

In a large bowl, combine the buttermilk, salt, black pepper, and paprika. Stir until well mixed. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for the best flavor.

  2. 2

    Cooking the Bacon

In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and set aside, leaving the drippings in the skillet.

  3. 3

    Cooking the Chicken

Preheat your oven to 375°F (190°C). Remove the chicken from the buttermilk brine and let any excess drip off. In the same skillet with the bacon drippings, heat the olive oil over medium-high heat. Add the brined chicken breasts and sear for 4-5 minutes on each side until golden brown.

  4. 4

    Finishing in the Oven

Transfer the seared chicken to a baking dish and drizzle with honey. Crumble the cooked bacon on top. Bake in the preheated oven for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).

  5. 5

    Serving

Serve the chicken hot, topped with bread and butter pickles. Enjoy your Mama Windham's Chicken!
