Instructions
- 1
Prepare the Veggies
Wash and chop all the vegetables into bite-sized pieces. Make sure to trim the Brussels sprouts and slice them in half if they are large.
- 2
Preheat the Oven
Preheat your oven to 425°F (220°C).
- 3
Toss with Seasonings
In a large mixing bowl, combine the chopped Brussels sprouts, carrots, sweet potato, cauliflower, corn, and bell peppers. Drizzle with olive oil and sprinkle with salt, black pepper, garlic powder, and paprika. Toss everything until the vegetables are evenly coated.

Roast the Veggies
Spread the seasoned veggies evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
