    Cook Couscous

    In a medium saucepan, bring 1 cup of water to a boil. Add the couscous, remove from heat, cover, and let it sit for 5 minutes. Fluff with a fork once ready.

    Prepare Vegetables

    While the couscous is resting, prepare the vegetables: dice the cucumbers, tomatoes, and bell pepper, finely chop the red onion, and slice the green olives.

    Mix Salad

    In a large bowl, combine the cooked couscous, cucumbers, garbanzo beans, tomatoes, capers, red onion, green olives, and bell pepper. Toss gently to combine.

    Make Vinaigrette

    In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of lemon juice, salt, and pepper to taste. Pour over the salad and toss to coat.

    Serve

    Top the salad with crumbled feta cheese and serve immediately or chill in the refrigerator for 30 minutes before serving.
