    In a medium saucepan, bring 4 cups of water to a boil. Stir in the stoneground cheddar grits and salt. Reduce the heat to low and let it simmer for about 20 minutes, stirring occasionally, until thickened. Stir in the shredded cheddar cheese until melted and combined.

    In a large skillet, heat olive oil over medium heat. Crack the eggs into a bowl, whisk them, and season with salt and black pepper. Pour the eggs into the skillet and scramble until cooked through, about 3-4 minutes.
