Begin by cleaning, peeling, and dicing the potatoes and bell peppers. Chop the fresh parsley and set aside.

In a large skillet, heat olive oil over medium heat. Add the diced potatoes, season with salt, black pepper, and garlic powder. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden brown and tender.

Once the potatoes are cooked, add the diced bell peppers and the house-cured corned beef. Stir well to combine and cook for an additional 5-7 minutes, until the peppers are slightly softened and the beef is heated through.
