    Prepare the Brisket

    Preheat your oven to 300°F (150°C). Season the brisket generously with salt and black pepper on both sides.

    Sear the Meat

    In a large Dutch oven, heat olive oil over medium-high heat. Once hot, add the brisket and sear it on both sides until browned, about 5-7 minutes per side. Remove the brisket and set it aside.

    Sauté the Vegetables

    In the same Dutch oven, add chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-6 minutes.

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Let it simmer for about 5 minutes.

    Combine Ingredients

    Return the brisket to the pot. Add beef broth, thyme, and bay leaves. Bring to a simmer.

    Braise the Brisket

    Cover the pot and transfer it to the preheated oven. Braise for 3-4 hours, or until the brisket is fork-tender.

    Rest and Serve

    Remove the pot from the oven and let the brisket rest for 15-20 minutes before slicing. Serve with the au jus made from the braising liquid.
