Make the Biscuit Dough
In a large bowl, whisk together the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Be careful not to overmix.

Shape and Bake the Biscuits
Preheat the oven to 425°F (220°C). Turn the dough out onto a floured surface, knead gently, and pat into a 1-inch thick round. Cut out biscuits using a biscuit cutter. Place on a baking sheet and bake for 12-15 minutes until golden brown.

Cook the Sausage
While the biscuits are baking, cook the sausage patties in a skillet over medium heat until browned and cooked through, about 3-4 minutes per side. Remove and set aside.

Assemble the Sandwiches
Once the biscuits have cooled slightly, slice them in half. Layer the bottom half with a sausage patty, some scrambled eggs, and a sprinkle of cheddar cheese. Top with the biscuit top and serve warm.
