Prepare the Chicken
Season the chicken breast with salt, black pepper, ground cumin, and chili powder. Heat 1 tablespoon of olive oil in a skillet over medium heat and cook the chicken until fully cooked, about 6-7 minutes per side. Remove from heat and let it rest before slicing into strips.

Sauté Vegetables
In the same skillet, add another tablespoon of olive oil. Add the sliced onions and bell peppers. Sauté until they are soft and slightly caramelized, about 5-6 minutes. Remove from heat.

Assemble Quesadillas
On one half of a flour tortilla, layer cooked chicken, sautéed onions and bell peppers, crumbled bacon, shredded cheese, and a spoonful of pico de gallo. Fold the tortilla over to create a half-moon shape.

Cook Quesadillas
In a clean skillet over medium heat, cook the quesadilla for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with remaining tortillas.

Serve
Cut the quesadillas into wedges and serve hot with additional pico de gallo on the side.
