In a medium bowl, whisk together bourbon, soy sauce, brown sugar, olive oil, minced garlic, black pepper, salt, and lemon juice until well combined.

Marinate the Salmon

Place the salmon fillets in a large resealable plastic bag or a shallow dish. Pour the marinade over the salmon, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, up to 2 hours.

Preheat the Grill

Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.

Grill the Salmon

Remove the salmon from the marinade and let any excess drip off. Place the salmon skin-side down on the grill. Grill for about 6-8 minutes per side, or until the salmon flakes easily with a fork.
