    Prepare the Quinoa

    Rinse the quinoa under cold water. In a saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes or until the quinoa is fluffy and all the liquid is absorbed.

    Chop the Vegetables

    While the quinoa is cooking, chop the carrots, zucchini, bell peppers, and red onion into bite-sized pieces. Mince the garlic.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1 minute until fragrant. Then add the carrots, red onion, and bell peppers, cooking for about 5 minutes.

    Add Zucchini and Seasonings

    Add the zucchini, fresh basil, thyme, salt, and black pepper to the skillet. Continue to sauté for another 5 minutes until all the vegetables are tender.

    Combine and Serve

    Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Drizzle with balsamic vinegar and mix well to combine. Serve warm.
