Prepare the Pineapple
In a large bowl, combine the pineapple chunks with the brown sugar, cinnamon stick, and cloves. Mix well to ensure the sugar coats the pineapple.

Add Water
Pour the 8 cups of water over the pineapple mixture, stirring to dissolve the sugar completely.

Fermentation (Optional)
If using yeast, sprinkle it over the mixture now. Cover the bowl with a clean cloth and let it sit at room temperature for 2-3 days. Stir it once a day.

Strain and Serve
After 2-3 days, strain the mixture through a fine mesh sieve into a clean container. Discard the solids. Serve the tepache chilled or over ice.
