Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dry Ingredients
In a large mixing bowl, combine flour and salt. Mix well.

Combine Mixtures
Add the yeast mixture and melted butter to the dry ingredients. Stir until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth.

First Rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape Muffins
Punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball and flatten it slightly. Coat each side with cornmeal.

Second Rise
Place the muffins on a baking sheet and cover with a cloth. Let them rise for another 30 minutes.

Cook Muffins
Preheat a skillet over medium heat. Cook each muffin for about 6-7 minutes on each side until golden brown and cooked through.

Remove the muffins from the skillet and let them cool on a wire rack.
