Prepare the Pasta

Cook the Penne
In a large pot, bring water to a boil. Add salt and penne pasta. Cook according to package instructions until al dente. Drain and set aside.
Cook the Shrimp

Sauté the Shrimp
In a large skillet, heat olive oil over medium-high heat. Add minced garlic and sauté for 1 minute. Add shrimp, salt, and black pepper. Cook until shrimp are pink and opaque, about 3-4 minutes. Remove from heat.
Make the Sugo Rosa Sauce

Combine Ingredients
In the same skillet used for the shrimp, add pomodoro sauce and bring to a simmer. Stir in heavy cream and allow to cook for 2-3 minutes. Add chopped basil and grated Parmesan cheese, mixing well.
Combine & Serve

Mix Together
Add the cooked penne to the sauce and toss to coat. Gently fold in the sautéed shrimp. Serve topped with slices of buffalo mozzarella and garnish with chopped parsley.
